Vegan Cream Egg
Cadbury creme eggs are too sweet for my taste, but my husband loves them. Unfortunately, the real thing contains dairy which he can’t have right now. These are very similar - I'm using a dark chocolate which tones down the over-the-top sickeningly sweet filling just a little. They're also vegan and simple to make in your own kitchen any time of year.
1 cup chocolate chips or chopped chocolate
1 ½ cups (150 g) powdered sugar
2 Tablespoons brown rice syrup
1 Tablespoon melted coconut oil
1 Tablespoon plus 1 teaspoon milk
1 teaspoon vanilla extract
You will also need a candy mold. I have an egg shaped silicone one, but any candy mold should work. I'm making 12 eggs, but the size and shape of your mold will dictate how much chocolate you need and how many candies you will get out of the recipe.
1. Start by melting the chocolate. I do this in the microwave in short bursts, stirring in between. Once its thoroughly melted, thinly coat your candy mold by dolloping ½ to 1 teaspoon of chocolate in and spread it around in a thin layer. Be careful to go all the way to the top of the mold. Place the chocolate coated mold in the freezer.
2. Mix together the remaining ingredients to make the filling.
3. Remove the mold from the freezer (chocolate should be set - this only takes a few minutes). Fill the eggs with the filling leaving a little space in the mold so that some of the chocolate is visible above the filling. Put the filled mold back into the freezer.
4. After about 15 minutes, remove the mold from the freezer again The filling should be pretty firm - if needed, leave it in the freezer longer.
5. If your chocolate is no longer fully melted, heat it back up using short bursts in the microwave and stirring in between each.
6. Spread a thin layer of chocolate over the filling in each egg, taking care to go all the way to the edge. You want this chocolate to meet the cooled chocolate and form a complete shell around your filling.
7. Place the eggs back into the freezer for at least 20 minutes. Remove from the freezer and turn the candy out from the mold.
NOTES:
I'm using Enjoy Life chocolate chips which I highly recommend. They're vegan and free of the top 8 allergens. Any chocolate that meets your dietary needs should work though.
