Banana Bread

This banana bread mixes all purpose and whole grain flour. Its our favorite banana bread, even better than all white flour versions. The texture from the whole grains is perfect in this moist, but not too moist, bread.

  • 4-5 bananas (2 cups mashed), ripe to over-ripe

  • 99g vegetable oil (½ cup)

  • 213g brown sugar (1 cup)

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 120g all-purpose flour (1 cup)

  • 113g white whole wheat (or whole wheat) flour (1 cup)

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • ¾ teaspoon salt

  • 1 teaspoon cinnamon

  • ½ cup chocolate chips

  1. Preheat oven to 350°F. Grease a metal loaf pan.

  2. Mash bananas thoroughly.

  3. Whisk brown sugar and oil together in a mixing bowl. Add mashed banana and whisk thoroughly.

  4. Add eggs one at a time, whisking after each addition. Add vanilla and whisk again.

  5. Add the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, cinnamon, and chocolate chips. Stir just until combined.

  6. Pour batter into prepared loaf pan and bake for 55-70 minutes. You will likely need to tent the bread with foil to keep the top from burning. Start checking after about 40 minutes of baking and tent when the bread is sufficiently browned on top.

  7. Remove the bread from the oven and from the loaf pan. Let it cool for at least 10 minutes on a wire rack before cutting.
