Lemon Bars
These are really easy to make and pack a strong lemony flavor.
2 ½ cups flour, divided
1 cup butter
½ cup powdered sugar, plus more for dusting
4 eggs
2 cups sugar (granulated)
2/3 cup lemon juice
½ teaspoon baking powder
Grease a 9x13 baking dish. Preheat the oven to 350°F.
Mix 2 cups of flour and 1/2 cup powdered sugar together. Cut the butter into this mixture thoroughly (no large pieces remaining). A food processor works well for this.
Pour the crumbly mix into your greased dish and pat into a roughly level layer. Its ok if it doesn't really hold together like a dough.
Bake the crust for 20-25 minutes until lightly golden brown.
While the crust is baking, mix together the filling. Combine the eggs, granulated sugar, lemon juice, 1/2 cup flour, and baking powder together and whisk thoroughly.
When the crust is baked, remove from oven. Pour filling over the crust and return it to the oven. Bake another 20-25 minutes until the filling is set.
Sprinkle a bit of powdered sugar over the lemon bars right when they come out of the oven. If it all sinks in/ disappears, sprinkle on a little more once the lemon bars are cool.
